The meat is made from beef, pork, and chicken from various parts of Japan, and the homemade sauce and dressing are made with salt from Noto, soy sauce and miso paste from Ono. Vegetables are seasonal Kaga vegetables and organic vegetables from contract farms in Suzu, Noto.
